Waffles

Who says our Traditional Scone Mix is just for scones?

One of my favourite things about our mixes is finding new ways to use them — and this one was too good not to share.

With a few simple changes, our Traditional Scone Mix transforms into golden, crispy-on-the-outside, tender-on-the-inside waffles. They’re quick to mix up, easy to make, and the perfect excuse to turn a bag of scone mix into something a little different.

Serve them warm with butter and maple syrup, pile them high with fresh berries and whipped cream, or keep things simple and enjoy them just as they are.

It’s another easy way to get a little more out of your favourite Bakery Bliss mix — because sometimes, a scone mix just wants to be a waffle!

Ingredients

  • 1 package of Bakery Bliss Traditional Scone Mix
  • 2 Eggs
  • 2 cups Milk
  • 1/2 cup Melted Butter
  • 3 tablespoons Maple Syrup OR 1/4 cup White Sugar
  • 1 cup Frozen Blueberries (optional)

Instructions

  1. In a large bowl, whisk together the eggs, milk and melted butter.
  2. Add the Traditional Scone Mix and stir just until combined. Don't overmix — a few small lumps are perfectly fine.
  3. Fold in frozen berries if using.
  4. If you're looking for a sweeter waffle, add ¼ cup sugar to the scone mix before combining the ingredients.
  5. Allow the batter to rest while preheating waffle iron.
  6. Add the batter according to the capacity of your waffle maker and cook until the waffles are golden brown and crisp.
  7. Cooking time will vary depending on your waffle iron, so keep an eye on them the first time you make them.
  8. Serve your waffles warm with your favourite toppings. A drizzle of maple syrup and a little butter is always a classic, but you can also add fresh berries, whipped cream, powdered sugar, or whatever toppings you love!
