Cozy Chicken Pot Pie with Cheese & Chive Dumplings

There’s something deeply comforting about a bubbling dish of chicken and vegetables topped with soft, golden dumplings. For me, chicken pot pie has never meant a pastry crust. Growing up, it was always a scoopable, spoon-friendly casserole. A creamy chicken filling topped with fluffy batter, not unlike the classic shortcut version made with Bisquick.
This version keeps that cozy, scoopable comfort but swaps the batter for our Cheese & Chive Scone Mix, which bakes into tender, savoury dumplings with just the right amount of cheese and onion flavour. It’s hearty, nostalgic, and perfect for using up leftovers.
I most often make this with leftover cooked chicken, potatoes, and vegetables, but you can also start from scratch using the full method below.
Chicken Pot Pie with Cheese & Chive Dumplings Recipe
Filling Ingredients
- 1/3 cup butter
- 1/4 cup flour
- 1 cup chicken broth
- 2 cups milk
- 1/2 tsp thyme
- 4 cups cooked chicken or turkey, diced or shredded
- 2 1/2 cups vegetables (frozen or cooked)
- I typically use onion, celery, carrots, and peas
Dumpling Ingredients
- 2 cups Cheese & Chive Scone Mix (about 1/2 package)
- 1/2 cup shredded cheese
- 1 1/2 – 2 cups milk
- 1 tbsp melted butter
Directions
1. Make the filling
In a large pot, melt the butter over medium heat.
Sprinkle in the flour and cook for about 5 minutes, stirring often, to remove the raw flour taste.
Slowly whisk in the chicken broth and milk, whisking constantly until smooth and lump-free.
Bring to a gentle boil, then reduce the heat. Add the thyme and simmer for about 10 minutes, until slightly thickened.
Stir in the cooked chicken and vegetables.
Pour the filling into a 3-quart casserole dish (approximately a 9×13 pan).
2. Make the dumplings
In a bowl, combine the scone mix, shredded cheese, and milk.
Stir just until combined into a soft dough.
Scoop the batter evenly over the hot filling and brush the tops with the melted butter.
3. Bake
Bake at 375°F (190°C) for 30–40 minutes, until the dumplings are golden and cooked through.
Let rest for a few minutes before serving, the sauce thickens slightly as it sits.
A Cozy Classic, Made Easy
